Strawberry Salsa
It’s the rare occasion that I make something from Family Circle magazine, but the July issue featured a couple of recipes that I made within 24 hours of first spotting them. We enjoyed both recipes on Father’s Day—a wonderful blueberry shortcake and this excellent strawberry salsa.
If you’ve never tried a fruit salsa, you are missing out! I highly recommend you go out and buy a pound of strawberries and make this delicious salsa. It would work as a side dish with fish, chicken, or pork; but I made it as an appetizer for Father’s Day. It disappeared very quickly. I could hear my mother saying, “If there are no leftovers, you didn’t make enough.”
True for sure—next time I’m doubling the recipe!

Strawberry Salsa
Ingredients
- 1 lb. strawberries, hulled and diced
- 1/4 cup thinly sliced green onions
- 1 jalapeño, seeded and diced
- 1/4 cup cilantro, chopped
- 2 tbl. fresh lime juice
- 1 tbl. agave syrup or honey (I used agave)
- 1/8 tsp. salt
Directions
Gently mix ingredients together in a bowl. Serve with tortilla chips or over fish or chicken.
