Cilantro Lime Rice
I am a big fan of Chipotle’s burrito bowl with carnitas. I’ve come up with a recipe for each of the main components that I always choose to make up my bowl, and this cilantro lime rice is one of them. It’s quite simple and goes together well with the carnitas, fresh tomato salsa, fresh corn salsa, black beans, cheese and lettuce. It also serves as a simple side dish for tacos and quesadillas.

Cilantro Lime Rice
Ingredients
- 1 tbl. vegetable or canola oil
- 1 cup basmati rice
- 1 tbl. fresh lime juice
- 2 cups water
- 1/2 tsp. salt
- 1 tbl. fresh cilantro, chopped fine
Directions
Heat oil in a 2-quart heavy saucepan over medium heat. Sauté rice in oil until almost translucent. Add lime juice, stir for 1 minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 15 to 20 minutes. Fluff rice with a fork. Add cilantro and mix in.
