Last week, Alex, my favorite niece in the whole wide world, got engaged.  She happens to be my one and only niece, so I can say she’s my favorite without hurting anyone’s feelings.  I have a notion that if I had 100 nieces it would still be true—I’d just have to be more tactful about saying it!  Andy, her fiancé, is a wonderful young man; and we are all very happy to have him join the family.  Andy is now my favorite nephew!  Oh, yes—he’s my only nephew.  🙂

Old-fashioned Butter Cookies (Roll-out Sugar Cookies)

Ingredients

  • 3 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup butter (2 sticks), softened
  • 3/4 cup sugar
  • 1 egg
  • 2 tbl. cream or milk
  • 1 1/2 tsp. vanilla

Directions

Cream butter with sugar until light and fluffy.  Beat in egg, milk and vanilla.  Add dry ingredients gradually; mix well.  Divide dough into four sections and chill for at least 30 minutes.

Roll out each section on floured surface to 1/8″ thickness.  Cut into desired shapes.  Sprinkle with sugar if desired.  Place on ungreased baking sheets.  Bake at 400o for 5 to 6 minutes until delicately brown.

My girls and I make these roll-out sugar cookies every year for Christmas.  We’ve used the same cookie cutters for years—the Christmas tree, the star, the bell, and the snowman.  The snowman is waving, and the challenge every year is to keep his arm from breaking or burning!  Generally, we sprinkle them with red or green sugar or a combination of both; but you can have fun decorating them with frosting as well.
