Turkey Stuffing Sandwich

The day after Thanksgiving, everyone in our family always looks forward to having one of our very favorite sandwiches ever.  What makes it so particularly delicious is the leftover stuffing from the holiday turkey.  I make a dressing that is almost half meat (hamburger and pork) and half bread stuffing that I season with sautéed celery and onions, Romano cheese, and Bell’s seasoning along with a small amount of raisins to give it a hint of sweetness.  If my family had to choose between the turkey and the stuffing, the stuffing would win hands down every time!

The sandwich is pretty simple using the leftover turkey and stuffing.  All we do is toast some bread, spread some mayo on one (or both) sides and layer some warmed up turkey and stuffing over the bread, topped off with a little cranberry sauce.  The sandwich has the best of sweet and savory going for it, and it is oh so tasty.

If you have a little of your favorite stuffing left over, I am sure it would work reasonably well as long as you add the mayo and cranberry jelly.  In any event, I hope you’re enjoying your leftovers as much as we are!

Turkey Stuffing Sandwich

Ingredients

  • 2 slices of your favorite sandwich bread or a sandwich roll
  • Mayonnaise to desired quantity
  • 2 to 4 oz. of sliced turkey
  • 2 to 3 tbl. of stuffing (you won’t need a lot)
  • 1 to 2 tbl. of cranberry jelly

Directions

Toast sandwich bread (or not if you prefer) and spread desired quantity of mayonnaise on one or both sides of bread.  Layer turkey on bread, then stuffing, finishing with cranberry jelly.
