Chewy Coconut Cookies

I am not a huge fan of coconut, but these cookies definitely float my boat.  The title of the cookies could just as easily have been “Crispy, Chewy Coconut Cookies” because the edges are delightfully crisp while the middle is oh so chewy.

If you have any coconut lovers on your Christmas cookie list (and even if you don’t!), I highly recommend this delicious cookie.  The recipe is simple, yet simply wonderful.  You’ll definitely want to make a double batch because a single batch won’t last long enough to give away!

Chewy Coconut Cookies

Ingredients

  • 1 1/4 cups flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup butter
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. coconut extract
  • 1 1/3 cups flaked coconut


Directions

Preheat oven to 350 degrees F.  Combine the flour, baking soda, and salt; set aside.

In a medium bowl, cream the butter, brown sugar, and white sugar until smooth.  Beat in the egg and vanilla and coconut extracts until light and fluffy.  Gradually blend in the flour mixture; then mix in the coconut.  Use a standard 1½” cookie scoop to drop dough onto an ungreased cookie sheet.   Cookies should be about 3 inches apart.

Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted (golden around the edges).

Cool on wire racks.   Makes about 2 dozen cookies
