Chewy Coconut Cookies
I am not a huge fan of coconut, but these cookies definitely float my boat. The title of the cookies could just as easily have been Crispy, Chewy Coconut Cookies because the edges are delightfully crisp while the middle is oh so chewy.
If you have any coconut lovers on your Christmas cookie list (and even if you dont!), I highly recommend this delicious cookie. The recipe is simple, yet simply wonderful. Youll definitely want to make a double batch because a single batch wont last long enough to give away!
