Amish Baked Oatmeal
When my husband and I retired and headed back east to our roots, we had the delightful experience of staying at a B&B in Lancaster County, Pennsylvania. It was the first time either of us had ever visited Amish country, so we were very glad of the opportunity to see the area, however briefly.
Foodie that I am, I couldnt wait to see what the second B in B&B had to offer in the morning. Amish baked oatmeal was one of choices, and a very delicious one it was. I think the best way to describe it is that it was like eating a soft oatmeal cookie in a bowl with milk and fruit. Dessert masquerading as breakfast! Whats not to like?
When I came across this recipe for Amish baked oatmeal, it didnt take long for me to make it. Its pretty quick and easy to throw together, and the results were just as I remembered it at the B&B. Hubby agreed.
Im always counting carbs, so this will not be a frequent indulgence, but it will be a very special one whenever I allow myself the guilty pleasure of having Amish baked oatmeal for breakfast. 🙂
Amish Baked Oatmeal
Makes 2 to 3 servings
Ingredients
- 1 1/2 cups quick-cooking oats
- 1/4 cup brown sugar
- 1 tsp. baking powder
- 3/4 tsp. salt
- 1/2 to 1 tsp. cinnamon, optional (I used 3/4 tsp. and thought it was fine.)
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 large egg, beaten
- 1 tsp. vanilla extract
- Warm milk
- Fresh fruit and/or brown sugar, optional

Directions
Preheat oven to 350° F. Grease an 8×8-in. baking pan and set aside.
Place oats, brown sugar, baking powder, salt, and cinnamon in a bowl and whisk to mix well. Stir in the milk, followed by the melted butter. Add egg and vanilla and mix well.
Spread evenly in prepared pan.
Bake 25 to 30 minutes or until edges are golden brown. Immediately spoon into bowls; add milk. Top with fruit and/or brown sugar if desired.
Frans Notes
This recipe can be doubled and cooked in a 9×13 pan which will make 6 to 8 servings. Cooking time remains the same. Any leftovers reheat well in the microwave.
