Salmon with Creamy Dill Sauce

I usually roast salmon when I cook it for dinner, but I haven’t roasted any salmon for a long while since I found this recipe which calls for a different method for cooking salmon.  Basically, you enclose the salmon in a packet of heavy-duty aluminum foil along with some seasonings, butter, onion, and lemon slices.  Easy peasy—and the results are simply delicious.

While the salmon is cooking, you prepare an easy dill sauce.  Once the salmon is done, serve it topped off with the sauce which includes a teaspoon of horseradish.  The horseradish gives it a hint of zip and doesn’t overpower the delicate salmon flavor.

Serve it with a nice green salad and a veggie, and you’re good to go.  This salmon has gone into my regular cooking rotation—it’s a winner!

Ingredients for Salmon

  • 1 salmon fillet (about 2 pounds)
  • 1 to 1 1/2 tsp. lemon-pepper seasoning
  • 1 tsp. onion salt
  • 1 small onion, sliced and separated into rings
  • 6 lemon slices
  • 1/4 cup butter, cubed


Ingredients for Dill Sauce

  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 tbl. finely chopped onion
  • 1 tsp. lemon juice
  • 1 tsp. prepared horseradish
  • 3/4 tsp. dill weed
  • 1/4 tsp. garlic salt
  • Pepper to taste

Directions

Line a 15x10x1-in. baking pan with heavy-duty foil; grease lightly.  Place salmon skin side down on foil.  Sprinkle with lemon pepper and onion salt.  Top with onion and lemon.  Dot with butter.  Fold foil around salmon; seal tightly.

Bake at 350° F for 20 to 25 minutes (obviously depends on how thick your salmon is).  Open foil carefully, allowing steam to escape.

Meanwhile, combine the sauce ingredients until smooth.  Serve with salmon.
