Pimiento Cheese Ball
The omicron Covid variant is raging through the country right now, so it is especially important for everyone to be very careful with their holiday plans. Please dont make this cheese ball and think you have to invite a crowd over to enjoy it! Let me assure you that my hubby and I could easily finish it off by ourselves in a few days. 🙂 If you do think its safe to share this delicious appetizer with a few close friends or family members who are full vaccinated and boosted, I guarantee you that it will be gone in a flash.
Pimiento Cheese Ball

Ingredients
1 pkg. (8 oz.) cream cheese, softened
2 cups shredded cheddar cheese*
2 green onions, chopped
1 jar (2 oz.) diced pimientos, drained
2 tbl. butter, melted
2 tsp. Worcestershire sauce
Assorted crackers
Chopped walnuts or pecans, toasted
*Buy a block of cheddar and use the large holes on your grater to shred the cheese yourself. I prefer not to use bags of pre-shredded cheese as they have additives to prevent clumping.
Directions
In a bowl, beat cream cheese until fluffy. Beat in cheddar cheese, onions, pimientos, butter, and Worcestershire sauce.
Shape mixture into a ball or press into a small bowl; smooth top. Cover and refrigerate for 30 minutes or until it firms up a bit. Then remove the cheese ball and cover with roasted nuts. Cover the cheese ball once more and refrigerate again.
Remove from the refrigerator 15 minutes before unmolding. Serve with assorted crackers.
