Chocolate Cupcakes, Simple ‘n Delicious

Just as every woman needs a simple black dress in her closet for any occasion, so does a baker need a simple and delicious recipe for chocolate cake or cupcakes.  This recipe fills the bill quite nicely.

I love recipes which call for ingredients that I always have on hand—no special trip to the supermarket required for me or anyone with a well-stocked pantry.  I came across the recipe on allrecipes.com and opted to make cupcakes rather than the 8” round cake specified.  It made 12 nicely sized cupcakes.  The cupcakes are dark, moist, and not overly sweet, so a buttercream frosting balances it in a perfectly delicious way.  Note that the addition of coffee is used to bring out and enhance the chocolate flavor.  You really can’t taste the coffee.

You don’t need to wait for Valentine’s Day to make these cupcakes, but now that I’ve mentioned it… 😉

Makes 12 cupcakes

Ingredients

  • 1 cup sugar
  • 1 1/8 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup butter
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 cup hot, strong, brewed coffee (can use 1 cup hot water plus 1 tbl. instant espresso)


Directions

Preheat oven to 350o F.  Line a muffin tin with 12 cupcake liners.

Sift together flour, cocoa, baking soda and salt.  Set aside.

In a medium bowl, cream butter and sugar until light and fluffy.  Add egg and vanilla and beat well.  Add flour mixture, alternating with coffee.  Beat until just incorporated.

Bake at 350o F for 18 to 20 minutes, or until a toothpick inserted into the cupcake comes out with a few tender crumbs clinging.
