Another source was from newspapers (most published a weekly food section) and, of course, from magazines. <em>Good Housekeeping</em> and <em>Family Circle</em> were always good for a keeper recipe or two, not to mention <em>Bon Appetit </em>and the now defunct <em>Gourmet. </em>Fast forward to these days, and all you have to do is google for any recipe your heart desires. Very efficient but so impersonal!</p> <p><span id="more-10229"></span>I am still so very happy when a friend shares a really great recipe with me. That was the case with this oh-so-flavorful Spanish rice. It’s always best when you can sample a recipe yourself; but, in this case, my childhood friend, who now lives in Texas, mentioned on Facebook how good it was. Since he is a fabulous cook, I immediately asked him for the recipe. Turns out he got it from a friend of <em>his. </em>So, the fine old tradition of friends sharing recipes hasn’t disappeared.</p> <p>Recently, a Mexican stir fry was on the dinner menu at my house, and this Spanish rice was the perfect accompaniment.</p> <p>I honestly don’t know the difference between Spanish and Mexican rice, but I don’t care what you call it. Knorr Tomato Bouillon with Chicken Flavor (available on Amazon)</li> <li>1 to 4 tbl. chopped cilantro for garnish if desired</li> </ul> <p><strong><em>Fran’s Note</em></strong></p> <p>The chicken stock and the tomato bouillon pack a really nice flavor punch. I didn’t add any salt at all because it really didn’t need it. Stir to combine and cover pan. Cook until rice is tender—you may need to add additional water if the mixture becomes too dry before the rice is tender. It took 15 minutes for my rice to become tender, and I had to add some water twice during that time. I’m not kidding when I say that’s what happened when hubby and I first tasted this Peruvian chicken dish. Oh my, is it ever good!</p> <p>The original recipe called for a 4-lb. roaster, but I decided to try it using chicken thighs rather than wrangle with a whole bird both before and after cooking. It’s a lot easier to control how the chicken cooks with individual pieces and reheating the leftover chicken thighs for a bonus meal was easier as well.</p> <p>The marinade and the green sauce give this chicken a special flavor unlike any I’ve ever tasted. There are no exotic ingredients, and I’ve certainly used many of them together in Mexican dishes I’ve made. Somehow, though, this combination of ingredients in both the marinade and green sauce just elevates the flavors to where the sum is greater than the individual ingredients.</p> <p>Peruvian-style chicken with green sauce is now on a regular rotation in this household because it’s frantastic. Loosen the skin and spread about half of the marinade underneath the skin and spread the remaining half evenly over the skin. Turn the heat down to 375<sup>o</sup> F and continue to roast until the juices run clear and internal temperature hits 165<sup>o</sup> F. Literally frantastic, I tell you!</p> <p><span id="more-9088"></span>I’m not sure if this recipe for braised lamb shanks qualifies as a St. Patrick’s Day meal, but I figure it’s the thought that counts! In any event, you don’t want to miss this as it could easily be a signature dish on any upscale restaurant’s menu. The lamb is fall-off-the-bone tender and is served on top of some of the best grits I’ve ever tasted along with a few spoonsful of a tasty sauce reduction. All the flavors work together to deliciously complement each other.</p> <p>After you brown the lamb shanks, you transfer them to a 6-quart slow cooker along with onions, carrots, and garlic that you have cooked until softened with red wine. Then you add some crushed tomatoes, chicken broth, and cumin and let ‘er rip. If you don’t like cumin, don’t worry because you cannot identify the cumin flavor when all is said and done. The ingredients all meld into a complex flavor that is just wonderfully pleasing to your palate.
