These delicious mini frittatas made for a very special breakfast on Sunday. They would make a lovely addition to a brunch as well since they can be served at room temperature (although you shouldn’t leave them out longer than an hour and a half due to the sausage). I’ve made them for large groups before and served them with homemade apricot scones (love that sweet and savory combo!) and orange mimosas. Breakfast doesn’t get any better than that!<\/p>\n<p><!--more--><strong>Potato and Sausage Mini Frittatas<\/strong><\/p>\n<p><a href=\"https:\/\/www.fransfavs.com\/wp-content\/uploads\/2012\/02\/Fritattas-Mini-Sausage-PF.doc\">Printer-friendly version<\/a><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<ul>\n<li>1\/4 lb. Italian or breakfast sausage<\/li>\n<li>1 tsp. vegetable oil<\/li>\n<li>1 small onion, chopped<\/li>\n<li>1 1\/2 cups diced red or russet potatoes <em>(or can use frozen hash-brown potatoes, thawed)<\/em><\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1\/4 cup fresh parsley, chopped<\/li>\n<li>1\/2 tsp. each: salt & pepper<\/li>\n<li>1\/3 cup water<\/li>\n<li>4 large eggs<\/li>\n<li>1 cup buttermilk<\/li>\n<li>1\/4 cup freshly grated Romano cheese <em>(can substitute Parmesan or Italian blend cheese)<\/em><\/li>\n<li>2 tbl. flour<\/li>\n<\/ul>\n<p><span id=\"sf43274041\">Product details Healthy sexual relationship is the back bone of the married life.
